 Wash and dry 1 kg of eggplant well;

 Slice the eggplants, with the skin, about 4 mm thick and place on a tray with aluminum foil;

 Take the eggplant slices to the preheated oven at 200ºC for about 2 hours or until it completely dehydrates, but without burning;

 After lukewarm, crumble the eggplants, by hand, and beat in a mixer or in a blender until it turns into flour.

 It is important to store eggplant flour at room temperature in a clean, dry container with a good seal.  This flour lasts for about 1 month.

 6 chicken eggs;

 5 tablespoons of grated Parmesan cheese;

 1 teaspoon of salt;

 4 tablespoons of water;

 1 tablespoon of powdered chemical yeast.

 Method of preparation:

 In a bowl, place the eggs and beat lightly with a fork to mix.  Add the eggplant flour, sesame and Parmesan cheese and mix well with a spoon or spatula.  Add salt, water and mix a little more.  Finally, add the baking powder and mix gently.

 Pour this dough into a greased loaf pan and bake in a preheated oven at 180°C for 30 minutes or until the bread is firm and golden.  Wait for it to cool down, disinform and then serve.

 1 tablespoon of eggplant flour;

 1 tablespoon of cottage cheese;

 1 egg.

 Method of preparation:

 In a bowl, place all the ingredients and mix well with a fork.  Heat a non-stick frying pan and pour the pancake batter, letting it cook until golden.  Flip the pancake and cook on the other side.  Turn off the heat and serve immediately.

 3. Orange cake with eggplant flour


 3 eggs;

 1 cup of eggplant flour;

 1 cup of corn starch;

 1/2 cup of brown sugar;

 3 tablespoons of butter;

 1 glass of orange juice;

 Orange peel zest;

 1 spoon of chemical yeast powder.

 Method of preparation:

 In a mixer, beat the eggs, sugar and butter.  Then add the cornstarch, eggplant flour and mix well with a spoon or spatula.  Gradually add the orange juice, the zest and, finally, add the yeast, stirring gently.

 Transfer the dough to a greased tray and bake in a preheated oven at 180ºC for about 30 minutes.  Wait to warm up, misinform and serve.
